Bryan Babcock for the Paperstore, Inc., May 2001 Introduction Is this the time when you look for the manual that says, "How to Plan a Stress  Free Wedding?" Or my fantasy favorite, "Its Your Wedding - It Should Be Fun." However we will go with the idea that planning, or thinking things through  will certainly help with the stress level and the costs. Planning a catered wedding reception dinner for three hundred people is the challenge of this discussion. Deciding on the  menu A traditional wedding reception generally includes hors doeuvres, an appetizer, the main course, wedding cake and coffee. Within that framework there certainly are variables, however the  first criteria for any good dinner party is usually what is fresh and in season. So lets start with that idea, and work our way forward - a trial  meal so to speak. Hors deoeuvres and appetizers in some part of the country are thought of the same thing. What is the general practice in the  genteel South? We know that to have small snack type things for the guests selection will keep them mingling until the wedding party arrives. The signing of the  license and often wedding photography will keep the bridal party away from the reception area, for an hour or so if the reception is to follow the wedding. An
