    that the population might one day outgrow the food supply (cited in Eiss, et al, 2001). As time went by, others have mirrored the concern of Malthus or have  chosen to be optimistic in the style of Martin Luther King Junior who, in accepting the Nobel Peace Prize in 1964, stated: "I have the audacity to believe that peoples  everywhere can have three meals a day for their bodies, education and culture for their minds, and dignity, equality, and freedom for their spirit" (quoted in Hollingsworth, 1999, p. 17).  The relationship between economics, nutrition and health is a complicated one, to say the least. It is often assumed that less economically developed countries (LEDC) have a  greater problem with undernourishment while more economically developed countries (MEDC) is more inclined toward problems associated with overnutrition or obesity. There are a number of variables that must be  examined before making such an assumption. Issues of development, what constitutes malnutrition and mitigating circumstances must be considered. The definition of development is seen in terms of  variables such as availability of food and water, the level of health, education and happiness, the sense of community and the level of technology available. Economics and well being  are two very separate elements within the definition of developed. Not all countries with a low standard of living have low ratings of well being and not all  countries with high economic status have high levels of well being (Anonymous, 2001). These indications are also variable across time and within different areas of each country.  The most common definition of nutrition is based on caloric intake as well as meeting nutritional needs. Undernourished means that there is less calories consumed than is needed for
